Today’s Cast Iron Lunch  – Leftovers Surprise

Here is what you need: I will make anything out of leftovers

Pilaf rice – from an  earlier meal this week, fresh mushrooms – diced,  fresh broccoli – diced,     Onion – diced, one egg, olive oil, sliced almonds, crushed walnuts,craisins, your favorite BBQ sauce

Directions:

Heat  the cast iron skillet on medium, coat with Olive oil, add diced onions – brown, add mushrooms and mix well with the oil.  Add more oil if necessary.

Let mushrooms cook for a minute or two, then add one egg and stir to scramble.  You can add the egg at any time, it could go first if you prefer.

Once egg is cooked, add sliced almonds, crushed walnuts , craisins and top with BBQ sauce.

This is a great lunch!
