Cast Iron Skillet Sweet Potato,Black Beans and Kale with Homemade Tortillas

Hello to those tuning in. Last nights dinner was a treat, as Amy from Avian stopped by our kitchen to cook one of her favorite  Vegetarian dishes.

For tonight’s dish you will need the following ingredients:

2 sweet potatoes, 1 can of black beans, 2 good handfuls of kale  – torn into bite-size pieces, 1 Lime, Olive oil, 1 teaspoon of lemon zest, 1 teaspoon of Cumin, Sea Salt to taste, 2 teaspoons of freshly ground pepper

Cut sweet potatoes in half lengthwise, then cut in two again, then cut each section into 1/4 inch pieces.

On medium-high heat place a large pan, for us cast iron, drizzle some olive oil, then add sweet potatoes, lemon or lime zest, a little sea salt and cumin. Stir to coat with oil and cook until browning occurs.

Cover for a minute or two,  reduce heat to medium, and let cook for  6-9 minutes. Stir occasionally until sweet potato’s become soft.

Now add black beans and stir thoroughly.  At this point add the Kale, salt and pepper to taste, and mix completely.  Cook covered for about 4 minutes.  Uncover and stir thoroughly. If it seems too dry, add more olive oil, then cook until the Kale is soft, or as you prefer it.

Serve with warm homemade tortillas, Cilantro and if you like add some sour cream.  For extra yumminess, squeeze fresh lime juice all over!

Homemade Tortilla Recipe:

2 cups of all-purpose flour, 1/2 teaspoon salt, 3/4 cup water, 3 tablespoons of Olive oil.

Combine salt and flour in large bowl , stir in water and oil. On a floured surfaced knead for about 12 minutes.  Or with a KitchenAid and dough hook, mix for 6-7 minutes. Let rest for 10 – 12 minutes.

Divide dough into equal portions. On a smooth floured surface, roll each portions into 7-in or bigger diameter circle.

Heat and cook on a cast iron skillet over medium heat until lightly browned.  Remove and keep warm until needed.
